Strawberry Rhubarb Pie

This classic summer treat is one of our favorites. We use only our own strawberries and rhubarb or those from a very select few other local growers, and it makes the difference.

For the uninitiated, it seems an odd combination. But those who have had the good fortune to taste a flaky, buttery crust filled with the intense tartness of rhubarb sweetened and deepened and complexified by the floral sweetness of fresh strawberries at their height of ripeness can say they have truly tasted a New England Summer. Nothing is quite so delicious.

Due to the fleeting nature of strawberry season here in Rhode Island, this is a very seasonal item. Strawberries need particular conditions to set and hold fruit well; our "normal" season is only three or four weeks in June, and that often varies in one or both directions by several weeks. But it's worth the wait, we promise.
